I actually really appreciate this move toward sobriety in fine dining settings. I recently experienced a non-alcoholic tea pairing at La Cime in Osaka that was structured like wine service with one tea mimicking red wine tannins and another with whiskey notes. The whole experience felt much more intentional without the fog of alcohol.
San Benedetto - big meaty bubbles, slight minerality. Followed by Saratoga, Topo Chico (oh, those sharp-ass bubbles in the morning as a WAKE UP), and Rambler (when in Austin).
This water sommelier thing was a difficult read for me because it just shows how ridiculously far we go to commodify something that shouldn't be a luxury because it is VITAL for humanity. It isn't about a fancy experience in a country or some fancy gown for a special occasion. It is water. Sometimes, I feel like we will end up in one of these dystopian movie scenarios where taking a s**** (pardon my French) will become so rare that it will make you rich.

I LOVE tea. Such a fun. I get so sad when restaurants have such sad options for me. I really appreciate when they have really great choices
